Caracterización físico, químico y fisiológico del daño por frío en frutos de tres especies de annonaceae

RESUMEN GENERAL El género Annona es el más importante en la familia de las Annonaceae. Tres de las siete especies (guanábana A. muricata, chirimoya A. cherimola Mill. y saramuyo Annona squamosa L.) que son producidas comercialmente, son apreciadas por un número creciente de consumidores en todo el mundo, debido a sus características tanto organolépticas como nutricionales; sin embargo, son frutos altamente perecederos y susceptibles a los daños por frío debido a las bajas temperaturas. Es necesario desarrollar tecnologías y manejo poscosecha de los frutos, para extender su vida poscosecha y conocer la respuesta de sus parámetros físicos, químicos y fisiológicos cuando son sometidos a temperaturas menores de 20 ºC. Se almacenaron frutos de guanábana, chirimoya y saramuyo a bajas temperaturas (4 – 18 ºC) y se maduraron a temperatura ambiente (22 - 26 ºC). Después de refrigerar los frutos de guanábana y chirimoya a temperaturas de 9 y 4 ºC se observó una menor respiración, poco cambio en los parámetros de color, se incrementó la actividad antioxidante, y el metabolismo de la vitamina C fue retrasado; estas variables están relacionadas con la sintomatología de los daños por frío. Mientras que, en los tratamientos de 14 y 11 ºC los frutos maduraron normalmente sin afectar negativamente la mayoría de sus variables. En los frutos de saramuyo, la respiración, la producción de etileno, el contenido de fenoles y de la actividad de peroxidasa se incrementaron en ambas temperaturas (18 y 7 ºC). En los frutos refrigerados a 7 ºC, los parámetros de color fueron similares a los frutos testigo; mientras que, en los frutos refrigerados a 18 ºC, se observaron cambios en los parámetros de color, al pasar de un verde amarillento a colores entre naranja y rojo con baja luminosidad y cromaticidad, característica relacionada más con la senescencia de los frutos que de daños por frío. Los frutos de saramuyo, específicamente los frutos provenientes de la península de Yucatán, es necesario evaluarlos a temperaturas más bajas con el fin de conocer los mecanismos inductores del daño por frío, y poder establecer las temperaturas y tiempos óptimos para su conservación

ABSTRACT The genus Annona is the most important in the family of the Annonaceae. Three of the seven species (soursop A. muricata, cherimoya A. cherimola Mill. and sugar apple A squamosa L.) that are commercially produced, are appreciated by a growing number of consumers around the world due to their organoleptic and nutritional characteristics; however, they are highly perishable fruits and susceptible to chilling injury due to low temperatures. It is necessary to develop technologies and post-harvest handling of the fruits, to extend their post-harvest life and to know the response of their physical, chemical and physiological parameters when they are subjected to temperatures below 20 ºC. Soursop, cherimoya and sugar apple fruits were stored at low temperatures (4 - 18 ºC) and matured at room temperature (22 -26 ºC). After refrigerating the soursop and cherimoya fruits at temperatures of 9 and 4 ºC, less respiration was observed, little change in color parameters, antioxidant activity increased, and vitamin C metabolism was delayed. Variables related to the symptoms of chilling injury. Whereas the fruits exposed to 14 and 11 ºC the fruits matured normally without negatively affecting most of its variables. In sugar apple fruits, respiration, ethylene production, phenols content and peroxidase activity increased at both temperatures (18 and 7 ºC). In the fruits refrigerated at 7 ºC, the color parameters were like the control fruits; while, in the fruits refrigerated at 18 ºC, changes in the color parameters were observed, when going from a yellowish green to colors between orange and red with low luminosity and chromaticity, a characteristic related more to the senescence of the fruits than to damage by cold. The sugar apple fruits, specifically the fruits from the Yucatan peninsula, it is necessary to evaluate them at lower temperatures in order to know the mechanisms that induce chilling injury, and to be able to establish the optimum temperatures and times for their conservation.
