Daño por compresión en frutos de ciruela mexicana (spondias purpurea l.)

RESUMEN Se determinó los cambios físicos, químicos y fisiológicos en frutos de dos variantes de ciruela mexicana ‘amarilla’ y ‘Cuernavaqueña’ sometida a daño por compresión en diferentes niveles de compresión a) punto de biocedencia (PB) donde la compresión donde puede modificar el metabolismo del fruto sin llegar a la ruptura, b) limite elástico (LE) donde la compresión no le afecta al fruto porque recupera su forma original y un grupo testigo. Se realizaron pruebas de compresión uniaxial en frutos de tres etapas de maduración verde, ½ verde y ¾ verde. El ecotipo ‘amarilla’ tuvo una pérdida de peso entre 3.24 y 3.37 % en PB y LE. En luminosidad existió poco efecto en las etapas de compresión teniendo un rango de L= 55.5 – 47.4 en los tres estados de maduración. En cromaticidad las etapas de maduración tuvieron un máximo de entre C*= 46 y 49. En azúcares los frutos testigo tuvieron incremento de 91.56 mg g-1, esto indica una aceleración del metabolismo de síntesis de azúcares promovida por el daño mecánico. En el ecotipo ‘Cuernavaqueña’, las cargas aceleraron los cambios de cromaticidad y los niveles de compresión punto de biocedencia y limite elástico no hubo algún efecto significativo en el resto de las variables medidas.

ABSTRACT The physical, chemical and physiological changes were determined in fruits of two variants of ‘yellow’ and ‘Cuernavaqueña’ Mexican plum subjected to compression damage at different compression levels a) biocedence point (BP) where the compression where it can modify the metabolism of the without reaching the break, b) elastic limit (EL) where the compression does not affect the fruit because it regains its original shape and a witness group. Uniaxial compression test were performed on fruits of three stages of green, ½ green and ¾ green ripening. The ‘yelow’ ecotype had a weight loss between 3.24 and 3.37% in BP and EL. In luminosity there was little effect in the compression stages having a range of L = 55.5 - 47.4 in the three stages of maturation. In chromaticity, the maturation stages had a maximum of between C * = 46 and 49. In sugars the control fruits had an increase of 91.56 mg g1, this indicates an acceleration of the synthesis metabolism of sugars promoted by mechanical damage. In the ecotype 'Cuernavaqueña', the loads accelerated the chromaticity changes and the levels of compression point of biocedence and elastic limit there was no significant effect in the rest of the variables measured.
