Aprovechamiento de residuos lignocelulósicos para la producción de hongos funcionales

Los residuos agroforestales son subproductos lignocelulósicos, una de las materias primas más naturales, abundantes y renovables. A pesar del perfeccionamiento e implementación de técnicas para su aprovechamiento, estos residuos representan un problema debido a que sus volúmenes rebasan la capacidad de biodegradación natural, convirtiéndose en un riesgo. Debido al alto contenido lignocelulósico de los residuos agroforestales, son considerados una fuente de recuperación energética, y los hongos tienen la capacidad de utilizar este tipo de residuos, por su capacidad enzimática, como fuente de nutrientes; por lo que, su utilización sería alternativa para el cultivo de hongos. En este trabajo biográfico se analizó la producción y utilización de residuos agroforestales, con la finalidad de promover su utilización como sustrato, para el cultivo de hongos funcionales (Agrocybe, Auricularia, Coprinus, Flammulina, Grifola, Hericium, Trametes, Schizophyllum y Volvariella), que son fuente de compuestos bioactivos y pueden crecer en amplia variedad de sustratos, teniendo la capacidad de convertir, los subproductos orgánicos en un alimento proteico. El análisis de la información mostró que los residuos agroforestales que se generan principalmente en el estado de Morelos son rastrojos y esquilmos (caña de azúcar, arroz, sorgo, trigo, maíz, jitomate, olote de maíz, algodón, cacahuate y frijol) y residuos generados en la industria maderera (virutas, aserrines, corteza y tocones) obtenidos de pino, oyamel y encino. Dentro de los residuos con mayor contenido lignocelulósico, están cáscara (arroz y cacahuate), paja (maíz, arroz, sorgo), mazorca de maíz, tallo de maíz, salvado (arroz, trigo), aserrín de pino y bagazo de caña. Por lo que, el estado de Morelos cuenta con una variedad de residuos agroforestales disponibles, para ser utilizados en el cultivo de hongos y generar productos alimenticios que pueden ser funcionales y nutracéuticos, así de esta manera contribuir también con el reciclaje de residuos, haciendo un ambiente ecológico.

Agroforestry residues are lignocellulosic by-products, one of the most natural, abundant, and renewable raw materials. Despite the improvement and implementation of techniques for their use, these wastes represent a problem because their volumes exceed the capacity for natural biodegradation, becoming a risk. Due to the high lignocellulosic content of agroforestry residues, they are considered a source of energy recovery, and fungi have the ability to use this type of residues, due to their enzymatic capacity, as a source of nutrients; therefore, its use would be an alternative for the cultivation of fungi. In this biographical work, the production and use of agroforestry residues was analyzed, to promote its use as a substrate, for the cultivation of functional fungi (Agrocybe, Auricularia, Coprinus, Flammulina, Grifola, Hericium, Trametes, Schizophyllum and Volvariella), which are a source of bioactive compounds and can grow in a wide variety of substrates, having the ability to convert organic by-products into a protein food. The analysis of the information showed that the agroforestry residues that are generated mainly in the state of Morelos are stubble and waste (sugar cane, rice, sorghum, wheat, corn, tomato, corn cob, cotton, peanuts, and beans) and residues generated in the wood industry (shavings, sawdust, bark, and stumps) obtained from pine, fir and oak. Among the residues with the highest lignocellulosic content, are husks (rice and peanuts), straw (corn, rice, sorghum), corncob, corn stalk, bran (rice, wheat), pine sawdust and cane bagasse. Therefore, the state of Morelos has a variety of agroforestry residues available, to be used in the cultivation of mushrooms and generate food products that can be functional and nutraceutical, thus in this way also contribute to the recycling of waste, making an ecological environment.
